2022 is right around the corner and we can hardly believe it! The only thing more exciting than the holiday season is the fresh start of a new year! Here at Almond Cow, we are looking forward to ringing in all the possibilities! And what better way to celebrate than with friends and family gathered together, enjoying appetizers, desserts, and cocktails all made using the Almond Cow? We can’t think of anything better!

From cheese boards, to fritters, to cupcakes, and cocktails, we have compiled a list of delicious and easy-to-make hand held recipes perfect for your New Year’s celebration! Enjoy!

Appetizers:

Cheese Board 

 

Make this beautiful Cheese Board using a variety of Almond Cow recipes, such as Ricotta Cheese and Cranberry Jalapeno Chutney. It makes a great party platter!

Mezze Platter 

Use your leftover pulp to make regular hummus and beet hummus. Add your favorite fruits, veggies, olives, and whatever else you like to snack on to a platter and enjoy!

Spinach Artichoke Dip 

Our Spinach Artichoke Dip is vegan, dairy-free, and uses leftover cashew pulp. Full of delightful flavor, this makes for a great appetizer. Serve warm with your favorite crackers, toasted baguette slices, or veggies.

Sweet Potato Fritters 

These Sweet Potato Fritters are ready in nearly 30 minutes for a perfect party appetizer. Delicious served savory as suggested or try with a pinch of cinnamon and drizzle of maple for a sweet addition to your menu.

Stuffed Mushrooms 

These Stuffed Mushrooms are an awesome appetizer. They are hearty, packed with flavorful herbs, and feature leftover almond pulp!

Desserts:

Chocolate Fudge

With only 4 simple ingredients, you can create this incredibly smooth, rich, and chocolatey fudge. It is sure to satisfy that sweet craving. Enjoy!

Pecan Pie Truffles

Nothing quite beats the smells of toasted nuts filling up the kitchen, especially this winter season. Try these pecan pie truffles as a bite-sized alternative to the classic pecan pie. The splash of bourbon adds a nice depth of flavor but can easily be substituted for vanilla extract or left out completely.

Lamingtons

An Australian classic with an Almond Cow spin. Soft sponge cake featuring almond milk and pulp, layered with a sweet raspberry jam, dipped in chocolate, and coated with coconut. A wonderful treat sure to surprise and delight your guests!

Use your leftover pulp and milk in these Blue Velvet Cupcakes with Vegan Cream Cheese Frosting. Just the right amount of sweetness and creamy frosting makes for a delicious dessert! Plus, you can also make them in mini cupcake tins so they are bite sized- convenient for any party!

Browned Butter Blondies

These Browned Butter Blondies are a fantastic alternative to its traditional cousin (the brownie). Vegan, gluten-free, and features cashew milk and pulp!

Cocktails:

Spicy Cranberry Sour

Making simple syrup in your Almond Cow is the key to this specialty cocktail. Deceptively simple, treat yourself with this vegan version of a classic whiskey sour. Aquafaba adds the creaminess while the spicy cranberry syrup adds a flavorful twist.
