Ingredients
Popsika (The "Crumble") for Fruit-Filled Kolaches
- ¼ cup room temperature strawberry almond milk vegan butter (Use Strawberry Almond Milk to make this.)
- ¾ cup sugar
- ¾ cup flour
- ½ tsp sea salt
- 2 cups strawberry almond milk
- ¾ cup sugar
- 1 tbsp active dry yeast
- ½ cup neutral light olive oil
- 1 teaspoon salt
- 6 cups flour, divided
- ¼ cup strawberry almond milk vegan butter (Use Strawberry Almond Milk to make this.)
- Popsika / Crumbles
- 1 cup strawberry jam
Directions
Popsika (The Crumble)- Mix ingredients together with a fork until it begins to crumble. Continue to add an equal amount of sugar and flour until it begins to stick together and crumble.
- Set aside.
- Stir together the strawberry almond milk, sugar and yeast in a large bowl and allow to sit for a few minutes until foamy.
- Stir in oil, sea salt, and 3 cups flour, then mix until combined. Knead in the remaining 3 cups of flour, lightly grease a large mixing bowl with olive oil, then cover and allow to rise overnight in the fridge.
- When the dough doubles, portion into 1.5 oz pieces and shape into balls, then place onto a greased baking sheet about 1 inch apart. Gently cover with greased plastic wrap and allow the dough to rise again until doubled in size (about two hours).
- Afterwards, press down the centers of the rounds with your thumb (coated in flour to prevent sticking) then fill each indent with 1 tsp of strawberry jam filling and sprinkle with the crumble / popsika on top.
- Finally, preheat the oven to 350°F. Remove the plastic wrap and brush the tops with melted vegan butter and bake for 15–18 minutes.
