Rice Pudding
Instructions
- Add rinsed rice, Almond Cow coconut milk, sugar, and salt to large saucepan and stir
- Bring heat to a boil, reduce to low, and let it simmer
- Cook for about 15 minutes, stirring occasionally to prevent the bottom from sticking to the pan
- Remove from heat, stir in vanilla extract, cinnamon, and raisins - it will thicken as it cools
- Serve warm or chilled, sprinkled with cinnamon

1 cup uncooked Arborio rice or short-grain white rice4 cups unsweetened coconut milk or other plant-based milk
½ cup granulated sugar or sweetener of choice
¼ tsp salt
1 tsp vanilla extract
½ tsp cinnamon
½ cup raisins, optional
