Oh, Peanut butter & jelly… a childhood classic! This oat pulpmeal is mixed with gooey peanut butter and sweet strawberry “jelly”.

Time: Less than 5 minutes

Ingredients
- oat pulp from one batch of whole grain oat milk
- 1 cup boiling water
- 3 tbsp peanut butter
- 3 tbsp strawberry jelly*
- 1-2 tbsp maple syrup
*To make the jelly, there are 2 methods you can choose from. Option 1: add 1 cup frozen strawberries (if they’re large, make sure to cut them to fit as many as possible in the cup) to a saucepan, and melt on medium heat for several minutes. Mash them until they turn into a jelly. This only takes a few minutes! Option 2: mash fresh strawberries, and use that as jelly.
Directions
- Place oat pulp in a bowl.
- Add boiling water to the oat pulp, stir, and let it sit until the water is absorbed. You can also place a plate on top of the bowl to trap the steam and make the oats even softer!
- Add maple syrup to the oatmeal, and stir. Add peanut butter and strawberry jelly, and mix. Enjoy!
