Mocha Balls

  • 2 cups coconut flakes, untoasted or toasted
  • ½ cup coconut sugar
  • ¼ cup cacao powder
  • 2 tsp coffee powder or granules
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 1 batch of almond milk pulp from your Almond Cow (from 1 cup of almonds)
  • 3.5 oz dairy-free chocolate of choice

In a food processor, process coconut flakes until a paste. Add coconut sugar, cacao powder, coffee, vanilla, salt and blend until combined.

Add almond milk pulp from your Almond Cow and process until a ball is formed. Roll dough into ½ tbsp balls and allow balls to firm in the fridge.

Meanwhile, melt chocolate in the microwave or over a double boiler. Once melted, coat balls in chocolate and place on a lined tray. Repeat process until all mocha balls are covered in chocolate.

Allow balls to set in the fridge for 20 minutes before enjoying.

Recipe makes 24 balls.

Note* Please allow the pulp to drain in the almond cow basket or strain pulp so no excess liquid remains before creating this recipe
