Mocha Balls
Instructions
1. In a food processor, process coconut flakes until a paste.2. Add coconut sugar, cacao powder, coffee, vanilla, salt and blend until combined.
3. Add almond milk pulp from your Almond Cow and process until a ball is formed.
4. Roll dough into ½ tbsp balls and allow balls to firm in the fridge.
5. Meanwhile, melt chocolate in the microwave or over a double boiler.
6. Once melted, coat balls in chocolate and place on a lined tray. Repeat process until all mocha balls are covered in chocolate.
7. Allow balls to set in the fridge for 20 minutes before enjoying.
Ingredients
2 cups coconut shreds, untoasted or toasted½ cup coconut sugar
¼ cup cacao powder
2 tsp coffee powder or granules
¼ tsp vanilla extract
pinch of salt
1 batch of almond pulp (drained to remove as much liquid as possible, from almond milk)
3.5 oz dairy-free chocolate of choice
