Turn your leftover cashew coconut pulp into these no-bake 7 ingredient Coconut Cookie Dough Energy Bites. Loaded with cashews, coconut and peanut butter for plant-based energy, these bites make for the perfect healthy snack or smoothie bowl topper. - 1 cup leftover cashew coconut pulp
- 3 tbsp honey (swap with agave to make vegan)
- 1/2 cup @eatnuttzo peanut pro
- 1/3 cup coconut flour
- pinch of sea salt
- handful of chocolate chips
Remove the leftover pulp from your Almond Cow and drain the excess liquid through a cheesecloth. Once you have a fairly dry pulp, place in a bowl and mix in other ingredients. Using a small scoop or your hands, form round tablespoon sized balls. Place in freezer for 15-20 minutes and store in a sealed container in the fridge until ready to eat. Enjoy!
