Macadamia Nut Pulp Cookie Cake
This creation is the most delectable treat to share with friends or make for a special occasion for when you’re looking for something a little fancier, featuring coconut and chocolate as the star flavors. This treat also happens to be gluten free, putting to perfect use leftover macadamia pulp and almond flour (which you can make from leftover almond pulp) as the base. Instructions
- Mix all ingredients together and let it sit in the fridge overnight.
- Grease a ramekin with coconut oil, add batter, and bake at 350 F for 22-25 minutes.
- Top with @fourthandheart chocolate ghee and @livingculturessuperfoods vanilla bourbon coconut probiotic yogurt.

- 1 cup macadamia pulp (from Macadamia Milk)
- ½ cup maple syrup
- pinch sea salt
- ½ cup almond flour
- 1 cup coconut shreds
- 1 tsp cinnamon
- 1 pasture raised egg
- ¼ cup mini chocolate chips
- 1 tsp vanilla extract
