This creation is the most delectable treat to share with friends or make for a special occasion for when you’re looking for something a little fancier, featuring coconut and chocolate as the star flavors. This treat also happens to be gluten free, putting to perfect use leftover macadamia pulp plus almond flour as the base.

Macadamia Nut Pulp Cookie Cake


  • 1 cup macadamia nut pulp
  • 1/2 cup maple syrup
  • Pinch sea salt
  • 1/2 cup almond flour
  • 1 cup raw shredded coconut
  • 1 tsp cinnamon
  • 1 pasture raised egg
  • 1/3 cup mini chocolate chips
  • 1 tsp vanilla extract


Mix all ingredients together and let it sit in the fridge overnight. The almond pulp is very wet so letting it sit overnight will allow it to dry out. Grease a ramekin with coconut oil, add batter, and bake at 350 F for 22-25 minutes. Top with @fourthandheart chocolate ghee and @livingculturessuperfoods vanilla bourbon coconut probiotic yogurt.
