Japanese Carrot Ginger Dressing

Say goodbye to store-bought salad dressings and make this Japanese Carrot Ginger Dressing instead. Featuring leftover pulp from ACE Juice!
Servings: 4-6
Time: 10 minutes

Ingredients:
- Leftover pulp from the ACE juice
- ¼ onion, finely chopped
- 1 knob ginger, minced
- 2 tbsp sugar
- 1 tbsp miso (white miso would be milder)
- ¼ tsp salt
- Freshly ground black pepper, to taste
- 1 tsp roasted sesame oil
- ½ cup rice vinegar
- ¼ cup neutral-flavored oil (avocado, canola, etc.)
Directions:
- Mix your leftover ACE juice pulp, chopped onion, and minced ginger in a bowl.
- In a separate bowl, combine sugar, miso, salt, black pepper, roasted sesame oil, rice vinegar, and a neutral-flavored oil. Whisk until well combined.
- Pour the dressing over the pulp mixture and mix well.
- Taste and adjust the seasoning if necessary.
- Let the dressing sit for a few minutes before serving, to let the flavors meld together.
