Japanese Carrot Ginger Dressing
Say goodbye to store-bought salad dressings and make this Japanese Carrot Ginger Dressing instead. Featuring leftover pulp from ACE Juice!

Servings: 4-6
Time: 10 minutes
Ingredients:
  • Leftover pulp from the ACE juice
  • ¼ onion, finely chopped
  • 1 knob ginger, minced
  • 2 tbsp sugar
  • 1 tbsp miso (white miso would be milder)
  • ¼ tsp salt
  • Freshly ground black pepper, to taste
  • 1 tsp roasted sesame oil
  • ½ cup rice vinegar
  • ¼ cup neutral-flavored oil (avocado, canola, etc.)

Directions:

  1. Mix your leftover ACE juice pulp, chopped onion, and minced ginger in a bowl.
  2. In a separate bowl, combine sugar, miso, salt, black pepper, roasted sesame oil, rice vinegar, and a neutral-flavored oil. Whisk until well combined.
  3. Pour the dressing over the pulp mixture and mix well.
  4. Taste and adjust the seasoning if necessary.
  5. Let the dressing sit for a few minutes before serving, to let the flavors meld together.
