Ingredients
- 1 bag frozen mango (about 1 lb)
- ¼ cup chia seeds
- ¾ cup plant-based milk
- ¼ cup plant-based yogurt or more plant-based milk
- 1-2 tbsp maple syrup
Directions
- Take mango from freezer and thaw overnight.
- Whisk all other ingredients together in medium bowl and let this chia pudding sit overnight while mango thaws.
- In the morning, purée thawed mango and divide between four small jars.
- Add chia pudding mixture on top. Serve immediately or chill until serving. Enjoy!
