This pudding is the perfect choice for when you find yourself wanting to sink a spoon into something sweet and chewy. Chia seeds gives this dessert a healthy dose of protein, fiber, and heartiness to keep you full and energized, while the sweet mango and creaminess from the milk lends a light, bright tropical punch.

- 1 bag frozen mango (about 1 lb)
- 1/4 cup chia seeds
- 3/4 cup plant milk
- 1/4 cup plant based yogurt or more plant milk
- 1-2 tbsp maple syrup
Take mango from freezer and thaw overnight. Whisk all other ingredients together in medium bowl and let this chia pudding sit overnight while mango thaws. In the morning, purée thawed mango and divide between four small jars. Add chia pudding mixture on top. Serve immediately or chill until serving. Enjoy!
