Ingredients
- ¾ cup almond pulp (from almond milk)
- ¼ cup unsalted almond butter
- 3 tbsp coconut sugar
- ½ tsp baking powder
- ½ tsp pumpkin pie spice
- ½ tsp vanilla extract
- pinch of salt
- 10 small pieces of dark chocolate
- smoked sea salt
Directions
- Preheat oven to 350F.
- Mix all ingredients together until a dough forms (except dark chocolate and smoked sea salt).
- Using a tablespoon, scoop dough and roll into a ball. Place onto a lined baking sheet pan. Press a square of chocolate into the ball of dough. Place the balls about 1 inch apart. Repeat until all of the dough is used.
- Bake for 15 to 18 mins or until center is set. Sprinkle with smoked sea salt.
- Allow cookies to cool for 10 mins before devouring. Keep refrigerated.
