A spin on traditional thumbprint cookies, these Pumpkin Spiced Almond Chocolate Cookies are perfect for entertaining and gifting! With minimal ingredients, they're simple to make and oh so delicious.

- 3/4 cup almond milk pulp (from your Almond Cow)
- 1/4 cup unsalted almond butter
- 3 tbsp coconut sugar
- 1/2 tsp baking powder
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- Pinch of salt
- 10 small pieces of dark chocolate
- Smoked sea salt
Preheat oven to 350F. Mix ingredients together until a dough forms. Using a tablespoon measure, scoop dough and roll into a ball. Place onto a lined baking sheet pan. Press a square of chocolate into the ball of dough. Place the balls about 1 inch apart. Repeat until all of the dough is used. Bake for 15 to 18 mins or until center is set. Sprinkle with smoked sea salt. Allow cookies to cool for 10 mins before devouring. Keep refrigerated.
