Pumpkin Spiced Almond Chocolate Thumbprint Cookies
Instructions
1. Preheat oven to 350F.2. Mix all ingredients together until a dough forms (except dark chocolate and smoked sea salt).
3. Using a tablespoon, scoop dough and roll into a ball. Place onto a lined baking sheet pan. Press a square of chocolate into the ball of dough. Place the balls about 1 inch apart. Repeat until all of the dough is used.
4. Bake for 15 to 18 mins or until center is set. Sprinkle with smoked sea salt.
5. Allow cookies to cool for 10 mins before devouring. Keep refrigerated.

¾ cup almond pulp (from almond milk)¼ cup unsalted almond butter
3 tbsp coconut sugar
½ tsp baking powder
½ tsp pumpkin pie spice
½ tsp vanilla extract
pinch of salt
10 small pieces of dark chocolate
smoked sea salt
