Ingredients

  • ⅓ cup onions
  • ⅓ cup celery
  • ⅓ cup carrots, plus more for adding into soup later
  • 5 cups hot water
  • 2 cups mushrooms
  • ¼ cup tomato paste
  • 2 sprigs thyme
  • 1 tsp oregano
  • 2 bay leaves
  • 1 cup potatoes, chopped
  • 1 can kidney beans, drained and rinsed
  • ¼ cup soy sauce (be sure to purchase gluten-free to suit dietary preference)
  • salt and pepper, to taste
