Enjoy a warm bowl of vegan Broccoli Cheddar Soup! Full of flavor, this delightful soup is made right in your Almond Cow.
Add hot water to the base of the Almond Cow (to the MIN line).
Add cashews and nutritional yeast to the filter basket.
Plug in the Almond Cow and press the cow start button. It will run through 3 automatic stages. When the green light stops flashing, it is complete.
Remove the filter basket from the top and pour the contents into the base. Mix it with the liquid already in there.
Refill the filter basket with ⅓ cup broccoli, ⅓ cup onions, and ⅓ cup carrots. Press the cow and let it run for another full cycle - until the green light stops flashing.
Once that is complete, pour all of the liquid from the base into a pot and add vegan cheese, salt and pepper to taste, and the remaining 1½ cups broccoli. Bring to a boil and then simmer for 15 mins. Serve and enjoy!
Feel free to incorporate the second round of leftover pulp into the liquid for a zero-waste option with slightly more texture.
