Ingredients

  • 1 cup cashews
  • ½ cup nutritional yeast
  • 5 cups hot water
  • ⅓ cup broccoli, plus 1½ cup more for adding into the soup later; rough chopped
  • ⅓ cup onions; rough chopped
  • ⅓ cup carrots; rough chopped
  • ½ cup vegan cheese
  • salt and pepper, to taste

Broccoli Cheddar Soup

  • ⅓ cup broccoli, plus 1½ cup more for adding into the soup later; rough chopped
  • ⅓ cup onions; rough chopped
  • ⅓ cup carrots; rough chopped
  • ½ cup vegan cheese
  • salt and pepper, to taste

Directions

Step 1

Add hot water to the base of the Almond Cow (to the MIN line).

Step 2

Add cashews and nutritional yeast to the filter basket.

Step 3

Plug in the Almond Cow and press the cow start button. It will run through 3 automatic stages. When the green light stops flashing, it is complete.

Step 4

Remove the filter basket from the top and pour the contents into the base. Mix it with the liquid already in there.

Step 5

Refill the filter basket with ⅓ cup broccoli, ⅓ cup onions, and ⅓ cup carrots. Press the cow and let it run for another full cycle - until the green light stops flashing.

Step 6

Once that is complete, pour all of the liquid from the base into a pot and add vegan cheese, salt and pepper to taste, and the remaining 1½ cups broccoli. Bring to a boil and then simmer for 15 mins. Serve and enjoy!

Note:

Feel free to incorporate the second round of leftover pulp into the liquid for a zero-waste option with slightly more texture.
