Oh, Peanut butter & jelly… a childhood classic! This oat pulpmeal is mixed with gooey peanut butter and sweet strawberry “jelly”.

PB&J oat pulpmeal in a filter basket

Ingredients

  • oat pulp from one batch of whole grain oat milk 
  • 1 cup boiling water
  • 3 tbsp peanut butter
  • 3 tbsp strawberry jelly*
  • 1-2 tbsp maple syrup

*To make the jelly, there are 2 methods you can choose from. Option 1: add 1 cup frozen strawberries (if they’re large, make sure to cut them to fit as many as possible in the cup) to a saucepan, and melt on medium heat for several minutes. Mash them until they turn into a jelly. This only takes a few minutes! Option 2: mash fresh strawberries, and use that as jelly.

Directions

  1. Place oat pulp in a bowl.
  2. Add boiling water to the oat pulp, stir, and let it sit until the water is absorbed. You can also place a plate on top of the bowl to trap the steam and make the oats even softer!
  3. Add maple syrup to the oatmeal, and stir. Add peanut butter and strawberry jelly, and mix. Enjoy!
