Pumpkin Spice Latte

2 mugs of vegan Pumpkin Spice Latte


  • organic brewed coffee
  • ¼ cup pumpkin puree (canned or cooked)
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • 2-3 medjool dates (pitted, or 2-3 tbsp maple syrup)
  • 1 cup raw pumpkin seeds/pepitas


To prepare the Pumpkin Spiced Latte place pumpkin seeds in your filter basket. Fill almond cow with coffee up to min or max and press the button. Take out filter basket and transfer leftover pulp into an airtight container for other use*. Refill the filter basket with dates and pumpkin puree. Add spices and press button again. Serve cold or heat in a small pot. Top off with milk foam (plant-based) and cinnamon. Store any leftovers in an airtight container or milk jug in the refrigerator for up to three days.
