Peach Gazpacho Recipe
Peach and tomato season is the best time of the year and
this peach gazpacho strikes a beautiful balance of the two
ingredients. This refreshingly tart chilled soup is perfect
for the warmer weather coming our way! Serve it up for a
delicious al fresco starter or a tasty palate cleanser before
your main course.
Instructions
- Add all ingredients to the filter basket and
- attach it to the top.
- Add cold water to the collector cup, up to the
- mL line, and place it in the base.
- Press the cow & blend for one full cycle.
- Combine the contents of the filter basket
- with the liquid in the collector cup.
- Refrigerate for an hour to chill, or enjoy
- immediately!
- Garnish with a drizzle of CocoCashTM creamer
- and fresh mint.

- 1 cup cubed peaches, not packed
- 2 small cloves of garlic
- 1 tbsp diced globe tomato
- 1 tsp diced shallot
- 1 tsp Coconut Shreds
- 2 tsp Cashew Pieces
- 1⁄2 tsp olive oil
- Bag of dairy-free chocolate chips
- 2 tbsp coconut oil
- Salt and pepper, to taste
