Enjoy this quick and easy pancake recipe utilizing your leftover oat pulp. Top with your favorite fruits, a drizzle of maple syrup and enjoy!

Servings: 6-8 pancakes

Ingredients

  • 1 ½ cups oat flour
  • ¼ cup oat pulp (from oat milk)
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • 1 cup oat milk (or any other plant-based milk)
  • 2 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • pinch of salt
  • avocado or coconut oil for frying

Directions

Step 1

In a large bowl mix together oat flour, baking powder and baking soda. Add the rest of the ingredients and whisk well until smooth and no clumps remain.

Step 2

Heat a frying pan over medium to high heat. When the pan is hot pour ¼ cup of the batter into the middle of the pan. Cook for about 1-2 minutes, then flip and cook on the other side until both sides are golden brown.

Step 3

Repeat until all of the batter is gone. Enjoy with fresh fruit and maple syrup.
