Blue Vanilla Ice Cream

Prep: 10 minutes, Freeze: 4-6 hours

This creamy, slightly sweet Blue Vanilla Ice Cream is the perfect treat anytime of day! Made with a few simple ingredients and no ice cream machine needed.

Servings: 3-6


  • 2 full fat cans of organic coconut milk
  • ½ cup organic cane sugar or sweetener of choice
  • ¼ cup cashew creamer (1 cup cashew pcs + 500 mL water)
  • 2 tsp organic vanilla extract
  • ¾ tsp blue butterfly pea powder
  • healthy pinch of salt


Step 1

Make cashew creamer.

Step 2

Add all ingredients to blender and blend until smooth.

Step 3

Pour mixture into silicone ice cube trays and freeze for at least 4 hours, or overnight.

Step 4

Blend cubes into ice cream and pour into an airtight container and put back in freezer to set for 1-2 hours. (If you prefer a milkshake consistency, feel free to enjoy as-is!)

Step 5

Scoop, serve, and enjoy!


*You can trade the vanilla extract for bubblegum extract to change the flavor!
