Rinse the rice under cold water in a fine mesh strainer until the water runs clear. Drain well.
In a large saucepan, combine the rinsed rice, coconut milk, sugar, and salt. Stir to combine.
Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, uncovered. Stir occasionally to prevent the rice from sticking to the bottom of the pan.
Remove the saucepan from the heat and stir in the vanilla extract, cinnamon, and raisins (if using). The rice pudding will continue to thicken as it cools.
When ready to serve, garnish with a sprinkle of cinnamon, if desired. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
