Creamy, rich Rice Pudding made with Almond Cow's almond milk machine

Rice Pudding

Servings: 4-6


  • 1 cup uncooked Arborio rice or short-grain white rice
  • 4 cups unsweetened coconut milk or other plant-based milk
  • ½ cup granulated sugar or sweetener of choice
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ cup raisins, optional


Step 1

Rinse the rice under cold water in a fine mesh strainer until the water runs clear. Drain well.

Step 2

In a large saucepan, combine the rinsed rice, coconut milk, sugar, and salt. Stir to combine.

Step 3

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, uncovered. Stir occasionally to prevent the rice from sticking to the bottom of the pan.

Step 4

Remove the saucepan from the heat and stir in the vanilla extract, cinnamon, and raisins (if using). The rice pudding will continue to thicken as it cools.

Step 5

When ready to serve, garnish with a sprinkle of cinnamon, if desired. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
