Pumpkin Pie Pulpmeal Parfait

Pulpmeal is a great way to use up your leftover pulp after making milk in the Almond Cow. This Pumpkin Pie Pulpmeal Parfait features layers of warm, fall spiced pumpkin, coconut yogurt, and pumpkin seed pulp. Makes for the perfect fall treat!

Pumpkin Pie Layer

  • 1 can pumpkin puree
  • ¼ cup maple syrup
  • ½ tsp vanilla
  • ½ tsp cinnamon
  • ⅛ tsp ginger
  • 1/16 tsp nutmeg
  • 1/16 tsp clove

Yogurt Layer

  • coconut yogurt

Pulpmeal Layer

  • ½ batch pumpkin seed pecan pulp (from pumpkin seed pecan milk)


Step 1

Add all pumpkin pie layer ingredients to a bowl, and mix until combined.

Step 2

Fill a parfait glass with all layers, and enjoy!
