Pumpkin Seed Spiced Granola

Enjoy this fall inspired Pumpkin Seed Spiced Granola. Featuring leftover pumpkin seed pecan pulp from your Almond Cow. The perfect snack or treat any time of day!


  • 3 cups oats
  • ½ batch pumpkin seed pecan pulp
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • ⅛ tsp clove
  • ½ cup pumpkin seeds


Step 1

Add all ingredients to a mixing bowl, and mix.

Step 2

Transfer mixture to a baking tray, spread it out so it’s evenly distributed.

Bake for 1 hour on 350F, stirring halfway through.
