Ingredients

Popsika (The "Crumble") for Fruit-Filled Kolaches

  • ¼ cup room temperature strawberry almond milk vegan butter

(Use Strawberry Almond Milk to make this.)

  • ¾ cup sugar
  • ¾ cup flour
  • ½ tsp sea salt

Vegan Kolaches

  • 2 cups strawberry almond milk
  • ¾ cup sugar
  • 1 tbsp active dry yeast
  • ½ cup neutral light olive oil
  • 1 teaspoon salt
  • 6 cups flour, divided
  • ¼ cup strawberry almond milk vegan butter

  • 1 cup strawberry jam


Directions

Super Strawberry Kolaches

Time: 15 minutes prep time, 8+ hours resting time, approx. 15-18 minutes baking time

These vegan strawberry kolaches would make the perfect pastry to go alongside a hot cup of coffee in the morning or as dessert. They're a beautiful sweet treat for any occasion!

Directions

Popsika (The "Crumble")

Step 1

Mix ingredients together with a fork until it begins to crumble. Continue to add an equal amount of sugar and flour until it begins to stick together and crumble.

Step 2

Set aside.

Vegan Kolaches

Step 1

Stir together the strawberry almond milk, sugar, and yeast in a large bowl and allow to sit for a few minutes until foamy.

Step 2

Stir in oil, sea salt, and 3 cups flour, then mix until combined. Knead in the remaining 3 cups of flour, lightly grease a large mixing bowl with olive oil, then cover and allow to rise overnight in the fridge.

Step 3

When the dough doubles, portion into 1.5 oz pieces and shape into balls, then place onto a greased baking sheet about 1 inch apart. Gently cover with greased plastic wrap and allow the dough to rise again until doubled in size (about two hours).

Step 4

Afterward, press down the centers of the rounds with your thumb (coated in flour to prevent sticking) then fill each indent with 1 tsp of strawberry jam filling and sprinkle with the crumble / popsika on top.

Step 5

Finally, preheat the oven to 350°F. Remove the plastic wrap and brush the tops with melted vegan butter and bake for 15–18 minutes.
