These vegan strawberry kolaches would make the perfect pastry to go alongside a hot cup of coffee in the morning or as dessert. They're a beautiful sweet treat for any occasion!

Popsika (The "Crumble")
Mix ingredients together with a fork until it begins to crumble. Continue to add an equal amount of sugar and flour until it begins to stick together and crumble.
Set aside.
Vegan Kolaches
Stir together the strawberry almond milk, sugar, and yeast in a large bowl and allow to sit for a few minutes until foamy.
Stir in oil, sea salt, and 3 cups flour, then mix until combined. Knead in the remaining 3 cups of flour, lightly grease a large mixing bowl with olive oil, then cover and allow to rise overnight in the fridge.
When the dough doubles, portion into 1.5 oz pieces and shape into balls, then place onto a greased baking sheet about 1 inch apart. Gently cover with greased plastic wrap and allow the dough to rise again until doubled in size (about two hours).
Afterward, press down the centers of the rounds with your thumb (coated in flour to prevent sticking) then fill each indent with 1 tsp of strawberry jam filling and sprinkle with the crumble / popsika on top.
Finally, preheat the oven to 350°F. Remove the plastic wrap and brush the tops with melted vegan butter and bake for 15–18 minutes.
