Japanese Carrot Ginger Dressing

Say goodbye to store-bought salad dressings and make this Japanese Carrot Ginger Dressing instead. Featuring leftover pulp from ACE Juice!

Servings: 4-6

Ingredients

  • Leftover pulp from the ACE juice
  • ¼ onion, finely chopped
  • 1 knob ginger, minced
  • 2 tbsp sugar
  • 1 tbsp miso (white miso would be milder)
  • ¼ tsp salt
  • Freshly ground black pepper, to taste
  • 1 tsp roasted sesame oil
  • ½ cup rice vinegar
  • ¼ cup neutral-flavored oil (avocado, canola, etc.)

Directions

Step 1

Mix your leftover ACE juice pulp, chopped onion, and minced ginger in a bowl.

Step 2

In a separate bowl, combine sugar, miso, salt, black pepper, roasted sesame oil, rice vinegar, and a neutral-flavored oil. Whisk until well combined.

Step 3

Pour the dressing over the pulp mixture and mix well.

Step 4

Taste and adjust the seasoning if necessary.

Step 5

Let the dressing sit for a few minutes before serving, to let the flavors meld together.
