If I want to add sunflower lecithin to this recipe and/or xanthan gum, should I add it to the water or to the seed basket?
We suggest adding sunflower lecithin and/or xanthan gum to the filter basket to help it incorporate into the milk.
Can I use white sesame seeds?
Yes, you can use white sesame seeds. 🙂
If they are roasted do you still need to soak them?
Can we make tahini with our Almond Cow?
Hi Verbena, Thank you for reaching out. The Almond Cow requires liquid to be in the base when making items. We do not suggest making nut/seed butter or tahini in the Almond Cow.
What do you do with the pulp?
Hi Tara! You can use the leftover black sesame seed pulp when making crackers, hummus, or savory dishes.
About the soaking: is it half a cup when soaked? So how much dry ingredient would that be?
And do you poor the excess water also in the basket/base?
Thanks!
Hi Sanneke! It is 1 cup of dry sesame seeds before soaking. We recommend discarding the soaking water and using fresh water in the base of the machine when making the milk.
I tried it twice–once with raw sesame seeds and once with roasted seeds. It tasted far better with roasted seeds and gives it the warm toasty taste. Prepare it like you would any plant based milk recipe on the AC website, no need to soak the seeds.
Thanks for your feedback, glad you enjoyed it with roasted sesame seeds!
