Enjoy this fall inspired Pumpkin Seed Spiced Granola. Featuring leftover pumpkin seed pecan pulp from your Almond Cow. The perfect snack or treat any time of day!

  • 3 cups oats
  • ½ batch pumpkin seed pecan pulp
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • 2 tsp cinnamon
  • ½ tsp ginger
  • ¼ tsp nutmeg
  • ⅛ tsp clove
  • ½ cup pumpkin seeds


  1. Add all ingredients to a mixing bowl, and mix.
  2. Transfer mixture to a baking tray, spread it out so it’s evenly distributed.
  3. Bake for 1 hour on 350F, stirring halfway through.
  4. Enjoy!
