Turn your leftover cashew coconut pulp into these no-bake 7 ingredient Coconut Cookie Dough Energy Bites. Loaded with cashews, coconut and peanut butter for plant-based energy, these bites make for the perfect healthy snack or smoothie bowl topper. We’ll warn you now, you may want to double the recipe because they’re just that good!

vegan Coconut Cookie Dough Energy Bites

Servings: 12

Prep time: 10 min

Run time: 15-20 min


  • 1 cup CocoCash™ pulp (from CocoCash™ Milk)
  • 3 tbsp agave
  • ½ cup @eatnuttzo peanut pro
  • ⅓ cup coconut flour
  • pinch of sea salt
  • handful of chocolate chips


  1. Remove the leftover pulp from your Almond Cow and drain as much liquid as possible. Once you have a fairly dry pulp, place in a bowl and mix in other ingredients.
  2. Using a small scoop or your hands, form round tablespoon sized balls. Place in freezer for 15-20 minutes
  3. Store in a sealed container in the fridge until ready to eat. Enjoy!
