  • 2, 15-oz cans chickpeas
  • chickpea pulp (from chickpea milk, approx. ½ cup pulp)
  • 1 cup tahini
  • juice of 4 lemons
  • ¼ cup olive oil
  • ¼ cup water
  • 2 cloves garlic
  • salt to taste


  1. Add all ingredients to a food processor and pulse until smooth, scraping down the sides as necessary with a spatula.
  2. Serve with a little more olive oil, paprika, and fresh parsley on top!
