Instructions

Place melted refined coconut oil, avocado oil, and plant-based milk in a bowl and whisk together until you get a pale mixture. Refrigerate for about 15 – 20 minutes, or until mixture is a bit firmer. Then, use a stand mixer with a whisk attachment or a hand mixer and whip the slightly firmed up vegan butter mixture on high for about 2 minutes. It will become pale and fluffy. Slowly add in the powdered sugar, stopping once to scrape down the sides of the bowl. Next, add the maple syrup and cinnamon. Mix on high for 1 minute. Transfer into an airtight container, smooth out the top and refrigerate for at least 8 hours or overnight.

  1. Thank you for all these wonderful recipes. Any ideas for substitute for powdered sugar? Additional sweetness can come from some white stevia powder but what about the volume and texture? We use low glycemic sweeteners such as coconut sugar, monk fruit sugar and Arrowroot powder and tapioca starch can add volume without flavor. Thank you again for help with this.

    1. Thank you, Lucky! There is a powdered monk fruit sweetener you could use in place of regular powdered sugar. The powdered monk fruit is 2x stronger than regular powdered sugar so you would want to use half the amount the recipe calls for. We have not tested using powdered monk fruit in this recipe so results may vary. Thank you!

      1. Thank you! Did not know that powdered monk fruit sugar is available. The monk fruit granulated sugar on hand has as the first ingredient erythritol. It is my understanding sugar alcohol can be problematic for some so will continue to proceed with caution. Thanks again!

    2. I always use coconut sugar. In addition, Ioften replace half of the sugar / powdered sugar in recipes with unsweetened grated coconut. It makes for example a tasty frosting. I’ll try with this recipe.
