Sometimes you just need a plate of freshly-baked cookies to go with your almond milk. These addictive and wholesome chocolate chip cookies are made with real ingredients, featuring your leftover almond milk pulp as the base. They also happen to be vegan and gluten-free! A couple scoops of your choice of plant-based protein powder makes them extra healthy and filling.

- 1 cup almond pulp
- 1 ripe banana
- 2 scoops of your preferred chocolate protein powder
- 1 cup rolled oats
- 1 cup chopped walnuts
- Vegan chocolate chips, to taste
Mix all ingredients together and bake at 350F for 20 minutes. For extra crispy cookies, put these on broil for an extra 3 minutes. You can also freeze them and toast one for a quick breakfast or anytime-snack!
